Week of June 16-22

Ants! Our unwanted guest. They are about to drive me batty!
This is the book I'm reading to Aaron this week for part of his homeschool. It's very cute I highly recommend it!

Beautiful flowers from our Formosa tree. They are soooooooo pretty!
I canned some very yummy strawberry and cherry jam this past week. They didn't set up very well but they are sooooo tasty!

I made Root Beer for the first time. It was a lot of fun and the children were amazed that mommy could actually make pop!

Here's the recipe:

2 c. white sugar
1 gallon lukewarm water
3 t. root beer extract
1 t. dry yeast

Mix well & pour into jars. Cover & set in the sun for 4 hours. Chill before serving the next day.
Pretty Lilly! You can actually see the pollen on the petals!

Tornado in Chapman, KS

Wednesday was a horrible day! Our town of Chapman was largely destroyed by a huge tornado,1/2 mile wide and reaching speeds of 140 MPH.
We were at home and never heard a siren. We heard the tornado,after our power was out. We tried to get to the only shelter in town but couldn't because the tornado had already tossed trees and overturned cars into the street and the road was completely blocked.
We tried a back road that our landlady sent us to, but the storm was so intense that we couldn't see more than a couple of feet in front of the car. Then our lights started blinking off and we couldn't see at all!We ended up in a ditch with mud up to my door! We walked 1 1/2 miles in deep mud and were picked up my a friend/neighbor. Thank goodness for cell phones!
Although it was a truly terrifying experience, we were very blessed. Our home is one of the ones still standing. We have a car. And the shelter that we were trying so hard to reach is where the tornado did the most damage!
I have struggled with fear some lately, but I am very VERY grateful!

Chicken Curry Recipe

My friend Teresa asked for this recipe. So I told her I would post it on here.

This is a very tasty curry and I found it in a book called "recipes from the 10/40 window" so this is a authentic recipe and it originated in India.

Chicken Curry
6 pieces of Chicken
4 c. water
1 onion, diced
2 cloves garlic, minced
2 c. coconut milk
1 c. applesauce
1/2 c. tomato paste
8 tsp. curry powder
4 chicken bullion cubes
1/4 c. flour
cooked rice

Cook chicken in water with onion and garlic until done. Reserve broth. Remove chicken from bone and dice. To broth add the coconut milk, applesauce, tomato paste, curry powder, bouillon and flour. Cook until thickened and stir in chicken. Serve over rice with condiments of pineapple, banana, coconut, raisins, peanuts or green pepper.

This recipe is sufficient for a family of 5. If you are having company or have a larger family I suggest you double it. Also we use tasty jasmine rice to put the curry on top of. And this is slightly spicy but not HOT. It's not even really very mild.

You can find the coconut milk in the Asian section of wal-mart and the curry powder in the seasoning section as well.

Our Garden




Here are a few pictures of one of our gardens. It's really not as weedy as the pictures say! I promise! :)

Mr. Snapper

Yesterday morning I could hear our not so smart dog outside yapping his head off. I got up to see what all the fuss was about. To me it looked like the dog was yapping at the grass so I go see what it is and low and behold it is this nasty little snapping turtle. Needless to say it was not in a very good mood. Did you know those things can actually lunge at you? I didn't!

Little Helper


Little princess helping mommy make butter! She's going to make a good mommy/helpmeet some day. :)



The boys decided to fix Anna's hair a week or so ago. No, that is not a hair clip it is a toy they were using as a hair clip. It was so tangled I almost had to cut it out. But with a little bit of patience and it was out. Shewwwww! I would have been so sad if I had to cut her hair.

we had a great time this past week with Part of Bens family. Mark and Nancy held a revival at our church and Ben, Nathaniel, Nastassia and I lead worship together. It was wonderful and God really blessed us! I know I learned a lot and I think everyone else did too! I think I saw God in a little different light than what I saw him in before. He has become much more real and loving to me.
